Instructions

  • In a medium bowl, whisk together flour, powdered sugar, and salt. Set aside.
  • In a small bowl, combine egg, vanilla extract, and almond extract. Set aside.
  • In a separate mixing bowl of an electric stand mixer, using paddle attachment, whip butter at high speed until light and creamy, about 1 minute. Add egg mixture and beat until combined, about 2 minutes.
  • Switch to low speed and gradually add dry flour mixture to wet mixture, stirring until it resembles peas and crumbs. Add water in small increments (½-1 tablespoon at a time) while stirring at low speed until dough pulls away cleanly from the sides of the bowl and gathers together at the center paddle.
  • Split dough into two equal parts. Put one half between two sheets of parchment paper and roll it out to a 1/4-inch thickness. Fold all 4 sides of the parchment paper to seal and prevent the dough from drying. Repeat with the second half of dough.
  • Keeping the dough wrapped in parchment paper, stack one sheet of dough on top of the other, and chill both in the freezer for 10 minutes (or refrigerator for 30 minutes).
  • Preheat oven to 375°F. Take out one sheet of dough at a time from the freezer (or refrigerator). Cut shapes with your desired cookie cutters. Transfer to a baking sheet lined with parchment paper or a silicone baking mat, placing cookies 1 inch apart. If the dough becomes too soft while cutting, chill again for 10 minutes.
